Brown Butter Banana Miso Chocolate Chip Cookies

Ingredients

  • 2 sticks or 16 tbsp of salted butter

  • 80 g (½ cup) of brown sugar

  • 220 g (1 cup) of white sugar

  • 60g white miso

  • 110 g (1 cup) ripe banana

  • ½ tsp cinnamon

  • 1 tsp vanilla extract

  • 330 g (2 ¼ cups) flour

  • 2 tsp baking powder

  • 113 g dark chocolate, chopped

  • Flakey salt

Instructions

  1. Brown 1 stick (8 tbsp) of butter and let it cool for 2-3 min.

  2. To the bowl of a stand mixer, add the cooled brown butter (it should still be slightly warm), another stick (8 tbsp) of butter), white sugar, brown sugar, and miso. Mix for 3-4 minutes until the mixture is light and fluffy.

  3. Mash banana and cinnamon together.

  4. Add the banana mixture and vanilla extract to the mixer, mix for 2-3 minutes

  5. Whisk together baking powder and flour in a separate bowl. 

  6. Add the dry ingredients to the mixing bowl and use a spatula to incorporate.

  7. Add chocolate and mix again.

  8. Weigh 3 oz scoops of dough and roll into balls. You should get ~13 cookies.

  9. Chill 30 min-2hrs.

  10. Bake at 375 F for 13-14 minutes, occasionally banging the pan sheet to let the cookies flatten in the oven.

  11. Sprinkle with flakey salt, let cool, and enjoy!

Banana Pudding

Inspired by Magnolia Bakery’s legendary banana pudding.

Ingredients

  • 1 (14 oz) can sweetened condensed milk

  • 1 ½ cups ice cold water

  • 1 (3.4 oz) box instant vanilla pudding mix

  • 3 cups heavy cream

  • 4 sliced barely ripe bananas

  • 1 (12 oz) box Nilla Wafers

Instructions

  1. In a large bowl, beat together sweetened condensed milk, water, and pudding mix. Beat on high speed for 2 minutes. Cover and refrigerate for 3-4 hours or overnight to let it set.

  2. In a large bowl, whip heavy cream until stiff peaks form. Fold in the set pudding until well combined.

  3. In a large glass bowl or 9x13 baking dish, place a layer of pudding mixture, a layer of Nilla wafers, and a layer of sliced bananas. Repeat layers twice then add another layer of pudding on top.

  4. Cover tightly and chill for 4-8 hours. Enjoy!

Banana Milk

Ingredients

  • 1 ripe banana

  • For dairy version:

    • 1 cup whole milk

    • 1 tbsp sweetened condensed milk

  • For vegan version:

    • 1 cup oat milk

    • 1 tbsp maple syrup

Instructions

  1. Add all ingredients to a blender and blend on high speed until smooth and creamy. Enjoy!
